I wouldn't say that a knight is equivalent to a rook often, but i dare postulate it's at least a good 4+ a smidgen.
A knight endgame against a lone bishop is often a significant advantage in bullet time scrambles.
But it is also important to emphasize that this does not apply to all cases. Just that it's enough to remember that it can be a big advantage more often than not.
