Thematic Tourneys - Grouping Question

I'm fairly new to chess.com and am curious about thematic tournaments. I get the concept, but don't understand the some of the pairings. Specifically, many of the thematic tourneys involve, say, a group of 6 players with five simultaneous games. Won't this mean each player will play only the black or white side against the others in the group? I thought that in a thematic, each player would want to play both the black AND white side of the opening (maximizing the experience). One game per opponent doesn't allow this, does it? Or am I missing something?

In that format you start off playing one color against each of the other players in your group and then, when your first game completes, you will play against that same player, colors reversed.
