Sicilian Theory Overestimated?

This game is a good example of how to avoid the opening knowledge of your opponent. In this game white plays a quiet line against the Sicilian to avoid all of the dangerous opening theory in the Sicilian. Eventually white was able to build up a kingside attack which ended quickly and decisively. So this game brings up the question: Is Sicilian opening theory overestimated? Why not play in the same fashion white did here to combat one of the most challenging openings against 1. e4
