Yeah I didn't get it. I found Qxd7 on instinct which is the top engine move instead xD

It is good because tactically and positionally. Tactically because after you take twice, Nd3 is impossible due to Rd8+ Kf7 Rf1, white is up an exchange.
When you have the queen vs other imbalances, you would prefer the position to be as messy as possible. While white's king isn't wind-free, it's kinda safe, most things are protected, and black's king isn't in a nice spot.
Thus, white is better.

That is after you remove the knight after bxf4 you should always eliminate you're opponent's best piece

Well, the move itself is pretty obvious.
