But they aren't 'mated' until the king is taken, no? It just so happens to be a non-issue in standard.
It says here that checkmate (often shortened to mate) is any game position in chess and other chess-like games in which a player's king is in check (threatened with capture ) and there is no possible escape. Hence the idea of taking the king is not mate, but an extra move with no official name other than “king captured”
