Is this situation is it better to just trade the bishops, let black castle and win a single pawn, or to sac the bishop (like I did) to win a pawn + rook.

Take bishop as your knight is trapped if you take rook after kd8 and also rook is passive. So it's more like knight n bishop for rook n pawn
