The cow is not that much different from the hippo
I understand your point, and I think you are partially right. However, I consider important to mention that the hippo opens the diagonals for the rooks, which some opponents can easily control, especially if they know you are premoving. The cow is more closed and more safe, in my opinion, and it's not easy to refute with one minute with the clock, you can almost 100% safely premove 6-8 moves in the beggining. Finally, I think the hippo setup works excellently, there's just a need to pay attention to the diagonals and be safe.

That's an intelligent decision. However, speaking for myself, I usually premove some moves in the opening in order to have some time later in the game, when a critical moment arrives. So, if this were your style, I would highly recommend some closed formation opening, with 0 risk.
If you don't premove the opening, maybe playing the King's Gambit would be fun, because it's not easy for Black to play into some lines (explore the Allgaier Gambit, for example) with no time, and a lot of mistakes is expected to be made.
For Black, maybe something aggressive, as the Portuguese or Icelandic Gambit, or some opening that opens lines for rooks and the queen, for example. The Benko is very fun, but is very unlikely you get it in bullet, so, just be creative and have fun!

It also depends on the opening from your enemy... Sometimes you can fremove "safe", sometimes not...
