It is known that the World Champion cannot beat the strongest chess program (Stockfish today), but what about a GM to play a program that has the same rating with his? Who will win?

It would depend on how the ratings were measured for the computer and the GM, and how they achieved their ratings- likely both of the them had a very different path in games they played and won. If the computer hadn't played any games, but had just been given that rating based on its computing power, then that rating wouldn't really mean that much.

Computer (chess-programs) ratings are established by playing many games against other programs (but not against humans!). Those games can be found on CCRL or SSDF sites. Also since 2000 GMs stopped playing tournaments together with computers, that is why I propose a match between a GM and a computer of the same rating.
