1. Nf3 and 2. b3 is a fun opening. Learn the Prisoner Gambit, it’s really fun.

Since you already play 1.d4, try the Blackmar-Deimer Gambit:

I enjoy the Evans Gambit and the Urusov Gambit.

And they don't suffice ...because?

The Evans gambit... A lot of people do not know how to play against it, and its fun for white.
