In a nutshell: 

black must prevent white from playing e5. He does this usually by Re8-Bf8-g6-Bg7, but you have to adapt to each situation. Similar plans arise in philidor and scotch as well, but I wouldn't know a comprehensive list because I'm not an 1...e5 player
