How to handle Steinitz defense

I have read the thing and seen the game but have zero knowledge of chess so I cant be like "oh but white blundered on move 23"

I mean does it really count if I’m playing with a handicap (classical openings)

Your line with 8.Bxc6 has been played 150 times in master play after 9...0-0, so I'd agree with you on your assessment (I don't play this variation personally I go for the Marshall)

I only play steinitz because I have to and I'm too lazy to learn 4k ruy theory
In a nutshell:
black must prevent white from playing e5. He does this usually by Re8-Bf8-g6-Bg7, but you have to adapt to each situation. Similar plans arise in philidor and scotch as well, but I wouldn't know a comprehensive list because I'm not an 1...e5 player
