How to react when your opponent surprises you in the opening

Do you have any practical examples from your games where you were surprised by your opponent in the opening? If so, what did you do?
I played a game with the white pieces a few months ago that opened
I had never seen this move before, but I realized that this probably meant that no master had played it and that is was simply a bad move. Then I saw that I could just attack the knight with d3 and then capture on e5. So I won this game pretty easily.
An example of a game where I was surprised in the opening and then misplayed it, was against a London System player, and it went like this:
I wish that I had spent more time thinking in this opening because I walked into his preparation and lost the game much too easily.
