If you finish your game, or get a bye and want to watch one of the other club games, I figured out how, but it's not simple so I'll write it up here.
First, you have to be friends with one of the two players. So go ahead and friend the other members of the club. Then, on the left, click on Play--> Live Chess (even though you don't want to play). Then, in the bottom right, click on the Friends icon, which is two people. Click on a person's username, then click on the binoculars.
If you're observing more than one game, each has a status button along the bottom of the screen, below whatever game you're observing. That's how you switch.
