But to answer your question, I would pick the QG and the Scandinavian. The QG because you get to play different positions with very different plans compared with the London. I picked the Scandinavian simply because I like it. It's a great opening for many reasons and one cool thing I noticed when preparing for the tournament two days ago was how many people have really bad records against it.
As for learning the openings, you could go with a "learn as you go" plan. Play a lot of games with the openings and analyze them afterward and see how you could have improved your play and just slowly get better that way.

And I agree that learning openings as you go is a useful thing to do at lower levels <1600
I hate to be the IMBacon of this thread but spending too much time on openings right now might not be so beneficial to improving your play. A good strategy book or tactics book should get you to at least 1200.
