Even though what you are speaking about PepsiChallenge can happen. The chances of it happening are remote. I have actually played a game where the mated persons pieces were used by the mating party. Usually that person getting mated their position is decimated.
I've played it in 3-player and it's fun. 4-player is a little different, but I think the concept would still be sound. I'm not sure it would combine well with the points system, though.
It sounds way too overkill the one with the other opponent who was mated’s pieces, as well because he would continue that opponent’s moves moving twice and more insane possibilities considering what he possibly was left with.

No, when you take over someone else's pieces, it doesn't give you two turns. It gives you one turn where you can move either one of your original pieces or one of the pieces of the person you killed.
Also remember that the other players aren't standing still while you kill someone else. They can see what you're trying to do and take action to either stop you or to make sure you lose a lot of pieces in the process.
