in all honesty, you should probably go for a draw, meaning you should probably play something like the London as white (if possible) and as black, something like the slav/semi slav. aka openings with clear and solid plans

A general rule of thumb is that a difference of 200 points means the lower rated player scores 1 out of 4, 400 points is 1 out of 16, 600 is 1 out of 64, 800 is 1 out of 256 and 1000 is 1 out of 1,024. I never beat or drew anybody rated 1,000 points above me but my wins and draws against those rated 400-700 points above me were due to me playing my normal game and my opponents not playing like gods.

A 1,000 point difference means that the higher rated player will, on average, play a much better game. That is not at all the same as saying the higher rated player will always play better. I will second EpicGM100 and say your best chance is to play what you know, not to play focusing on a draw unless that really is the type of play that you know. That way you are more likely to take advantage of any oversights your very human opponents might make. My losses when paired down 500 points have often come from overconfidence causing a lack of focus.

Playing what you know will give you a better chance of getting that 1 win out of 1,024 versus trying to get 2 draws out of 1,024. And it will also give you more experience that will be useful in helping your skills improve and reduce that 1,000 point gap. If your opponent has a lack of focus then you are more likely to see a mistake in positions you are comfortable with.
