Ruling out Friday, the same logic might apply to Thursday, on Wednesday if there was no quiz, it should have to be on Thursday to be a surprise
The pattern repeats over every day, until Monday, but that still doesn't make it a complete surprise

huzzah you solved it. You eliminated every day. The test doesn't exist. If there is a day before the test it's not a complete surprise. Since you eliminated Tuesday-Friday all that's left is Monday by that logic, so that's also impossible.
