On chess.com I mostly play daily, but also have been playing a bit of 15/10 and a little 3/2. In general I prefer at least some increment (or delay, if that's also available), because there's something really lame feeling about a game ending because there's less time on the clock than it takes to move a piece.
But the most fun over the board, face to face, in person chess I've ever played is at much longer time controls. 60 minutes at least. And major tournaments that have 2+hours per player are on a completely different level; they are the most exhausting brain workouts ever, in a good way.
Online, though, G/60 feels a lot longer than in person. Too many other distractions in my home compared to a tournament hall or chess club. But I grew up with everyone saying that fast time controls are bad for your chess development, so maybe I should start playing 60 minute games online to try to improve. *shrug*
That said, a fun way of playing that I've been doing with my son (who is not as strong a player as me but is getting better quickly) is a series of games with shrinking time controls. So game one starts at 16 minutes or 32 minutes per player (depending on how much time we have altogether to play), and then whoever wins has their time control cut in half for the next game. It's a straightforward way of handicapping games between players of different skills, and it inevitably produces some pretty silly/fun conclusions by the fifth or sixth round.

I love playing long time controls over the board at tournaments, but not online as much.
What a neat way of handicapping the stronger player and getting a variety of time controls at the same time. I had never thought about cutting the time in half for the winning player.

Chess.com only uses increments, not delays. They are two similar time control devices, but with important differences.
Delay means the clock pauses for x seconds at the start of each move, while increment means x seconds are added at the end of each move. Increment allows a player to build up additional time over the course of play, while delay does not.
15/10 is fifteen minutes, plus a 10 second increment.
