I'll accept late registrants through the first week; they can watch the first video recorded, and then jump into the group's private forum to ask their questions and get in touch with myself and their fellow students.

I do hope this succeeds, as I'd definitely consider taking some of the classes in the future, but the timing of the first two classes rules out my participation. Saturday is better than Friday, since at least it's a weekend, but that's the day I play at my local chess club, so Sunday would be best for me. Or later in the day on Saturday. Or week nights (US time - maybe 7 pm Pacific/10 Eastern, for no more than 2 hours).
I'd say that for the first class or two, it's probably worth it for you to run the class with less students than you want. The publicity from positive student reviews should help make later classes more successful.
Another option you may want to consider in the future - Let the students pick the timing. ie Announce a topic that one of your instructors is interested in teaching, and then have potential students tell you what day/time is best for them, running the class at the time that will attract the most students.
i like your idea of announcing a course topic and then gathering the interested parties' availability.
i am willing to start the course with less students than the course is designed for, but there are some limits to how much we want to invest in a course that reaches only a few people.

we did the first day's class with 9 people. we need three more to join this week for the class to hold. i think we have a 50-60% chance. we shall see. first class i think went great, so the 10 of us are really hoping it works out.

Even if this works out, I'll tend to hire other instructors to do this; I won't have time to teach these intensive courses myself. This is your big chance!
Let me emphasize, you aren't going to just be learning about the King's Gambit-- the King's Gambit is just a vehicle. Yes, our examples will all come from the King's Gambit, but what you are going to be learning is:
- how to play the opening, particularly:
- how to handle open games
- how to handle situations with material imbalances
- how to weigh different values: material, development, center, king safety
- how to use the initiative/dynamic play
- how to recognize the "nature" of the game, and changes to it (how critical is the moment, what is the current pace of play, how are values changed based on the nature of the position)
- how to use logical thinking
- how to be flexible and original and fresh (in your thought process)
Finally, you'll learn a bunch of themes in the king's gambit (like typical patterns and ideas), and see how having a stock of themes helps your thinking in the opening.
