Chess Mentor has different courses available. Apparently you chose an easy course. Maybe you should try a harder course.

I've been using Chess Mentor for quite a bit during my short time here and for about 3/4 of that time has been spent on going over basic checkmates. One or two move checkmates. Does it do this with everybody (if so how long has it lasted) if not, am I doing something wrong? Is there a setting that I missed?
