I'm looking for sidelines to play.  I don't want to play into the Old Steinitz Defense or the Berlin Defense or the Giuoco Pianissimo, really dull. I've considered the Kings Gambit or Max Lange Attack, I don't know though.

I'd go with the Max Lange, even though the opponent needs to play specific moves, the Max Lange still sets up a good position and usually gives you an early lead. Here is a game where I played Max Lange in a daily game and crushed my opponent: https://www.chess.com/analysis/game/daily/245703590

Lately, a lot has been happening at the GM level and opening theory in general with the Italian Game. I wouldn't be so hasty to call it boring nowadays.

Even in the 1990's there were books taking a walk on the wild side of the Italian Game.

The Vienna Game with 3. g3 (Mieses Variation) is pretty fun to play.
