As a beginner (~500 ELO), should I be playing the Italian Game or the Scotch?


You don't need a whole lot of theory to play the Ruy Lopez at the OP's level. He or she isn't going to face opponents who are booked up on it and spring the Marshall or the latest wrinkles in the Breyer on him or her. I think that even at lower levels the Ruy Lopez leads to much more interesting and varied games than the Italian, many of which at this level tend to quite similar to one another and quite boring. Chess is fun. Don't get fixated on ratings, as so many on chess.com evidently are, as this tends to lead to over-caution, particularly in the opening phase. Chess is creative and beautiful. Play the Ruy Lopez, enjoy yourself, and surrender yourself to Caissa's warm embrace.
Quick side note:
The Fried Liver Attack isn't perfect and allows black to fight for equality.
So, for those who want better, there is the Perrux variation.
In this attack, it is actually +2.3 for white. However, there is one flaw in this. If your opponent knows what they're doing, they'll play Qe2+ after exd5, equalizing the game.
