If you play the London as white and the Caro-Kann as black, then the Slav Defence 1 d4 d5 2 c4 c6 for black is a nice complement in the same spirit.
Play the Queen's Gambit Declined. It is the simplest of the good openings and you will learn the basic ideas for all the d4 openings like the Nimzoindian, the QGA, the Semislav, the QID.

You are abandoning games just because you are out of book early in the game? This is the most ridiculous thing I've ever seen on this forum, and the bar is pretty high. Just play the game, dude, it does not matter if you know a couple of book moves more or less.
If you ever go out into the real world and play otb, you won't be able to just quit every time somebody plays an opening you don't like. If you are interested in becoming a stronger player you will have to learn more about the game, including how to evaluate unfamiliar positions. So just play 1.....d5 and go into the queen's gambit. Perhaps the Slav would be a good choice, or perhaps the Tarrasch variation as black starts counter-attacking immediately. And if your opponent plays your own favorite London system, just use the reply that gives you the most trouble as white.
I like to play against 1.d4 but no one ever plays it. Why is that?
Probably because 1. e4 is much more common sub-1200 rating. 1. e4 is probably about the same as 1. d4 in it being just as solid, but I think many beginners are taught 1. e4 either because of Fischer's "best by test" or because it usually allows for swift development and piece activity. 1. d4 can of course have easy piece development too, but the first few moves tend to be closed positions more often and I think beginning players tend to enjoy open positions (even if 1. e4 and 1. d4 can both be open or closed).
