Best French Line for White

I have recently switched to opening with 1. e4.

What is the best line (ideally simple) to answer 1. e6?

The Exchange? The Tarrasch? The Classical?

3.Nc3 is the critical move, most grandmasters play it.

Pick a line vs. the Winawer, the classical 3...Nf6, and the systems where black takes on e4.

Why does everyone say the exchange? It is crap and promises white nothing. Play 3.Nc3 or 3.Nd2, you will have to learn some theory, but in the long run you will have good chances of pushing for an edge, and most of all it avoids a boring game!

 Because they secretly play the French as black and want you to play the exchange.  It's all very kinky and twisted.

The exchange is psychologically annoying for a French player as it opens the game up. Players that play the French as Black generally don't like that.

That said, I play the Tarrasch ;). It seems a better place for the knight than c3, the knight there blocks the c-pawn and is liable to Bb4, pinning it.

You would think the exchange would be psychologically even more annoying for the white player, as he is expecting to have the initiative.

Players below 1800 don't need to be worried about "Initiative" or who moves first.

Morphy played the exchange in the French and Caro Kann so I'm sure it is good enough for us.

When you get up there in rating and strength then other factors weigh in which could cause you to avoid the exchange variations.

I'm a lowly 1400 so what do I know right?
