While from Russia, Spassky and Alekhine settled in France; Louis de La Bourdonnais was French, unofficial champion even before Morphy.  I don't know any active French grandmaster today.

Or... are you referring to masters who are fond of the French Defense?  I'm confused...  Foot in mouth

In that case....I dont know who the top GMs are that play the french regularly. Korchnoi and Uhlmann are 2 of the best french defense players the game has known I believe. I have read that Uhlmann has only played the french against 1e4 his entire career. Korchnoi used the french exclusively in one of his Karpov matches and it served him well.

Evgeny Bareev, Alexey Dreev, Mikhail Gurevich, Alexander Khalifman, Smbat Lputian, Alexander Morozevich, Teimour Radjabov and Nigel Short (among others) are practitioners of the French Defense.  In the past we have Géza Maróczy, Mikhail Botvinnik, Viktor Korchnoi, Aron Nimzowitsch, Tigran Petrosian, Lev Psakhis, Wolfgang Uhlmann and Rafael Vaganian.

Mikhail Botvinnik was playing great French Defense.He was one of the best defender players of all times.

I will answer to the not-even-asked question : the best current French player is Etienne Bacrot. A former great hope born in 1983 who reached a 2700 elo rank at the aged of 21. He seems to be yet a bit out of shape.

Players of the French Defense; well I will tell you the ones I have learned the most from: IM John Watson, FM/CCM Mitch Weiss, GM Uhlmann, GM Nogieras, GM Gligorich, GM Short, GM Robert Byrne, GM Korchnoi, & GM Ivanchuck;  in pretty much that order ... but I would really like to see some Morozevich French games too, seeing him mentioned above. 

I have not studied him playing the French, tho I have seen other games of his; and often find them fascinating. He seems to me, at times one of the most interesting and innovative players I have seen in a long time. Besides being a former WC of course. And apparently fearless...

I don't think Morozevich was ever world champion (WC).

The variation that someone spoke of in e4 e6 d4 d5 Nc3 Nf6 e5 Nfd7 Nce2 is a very close relative to the Nf6 Tarrasch.  Many lines transpose into the mainline f4 Tarrasch, while others take up their individual character.  If Black can get his pieces developed quickly and counter White's center with c5 and f6 in time, Black has excellent chances in the ensuing middlegame.
