King's gambit is the one that comes to mind, yet there are other ones. Scotch gambit gives up one pawn for better development and sharp tactical lines. The Tennison Gambit, E4 D5 Nf3 is full of traps and is a lot of fun. For black the Trailer Counterattack is spectacular and very common to pull off.

That's probably easier to play, but surely taking the pawns must be more critical if you can defend the complications.

Yeah, see, I can't defend well. I can build up solid positions, I can all out attack, I can play endgames, yet if my opponent gets an attack going, I'm screwed

I was indeed thinking about the line where black takes both pawns, if your oponent doesn't know the opening the he probably will take both in quick time formats.
