how to counter random moves in french defence

I mean REAAALLY random. Something like queen checks in exchange variation or random fianchettos or c4s in advanced. Actually, the question that interests me the most is how to block the queen checks in exchange. How to understand which bishop block is better? Since my old strategy of blocking only with LSB was crushed by queen double check winning a pawn in a bullet game(e4 e6 Nf3 d5 exd5 exd5 Qe2+ Be6 Qb5+) or these random knight g5/e5 jumps trying to ruin my position. Maybe there are like general french defence principles so I wouldn’t have to memorize all of that?

the LSB tends to be a really flexible piece in the excahnge, so it makes sense to use the DSB as it only goes to e7 or d6 and the difference is miniscule. Also as you pointed out you dont want to drop the b-pawn unless you get sufficient counterplay.
