if black plays 3. C5, white will need to dedicate a lot of resources into defending the center pawns. Taking, gives up the center as Nc6 and eventually e5 would win back the pawn or at least have ample compensation and 8. H5 is needless for black, it gives a hook for whites attack and puts a pawn out for no good reason
