is the Caro-Kann advance Botvinnik-Carls (as black) playable??

Very playable. The game will resemble a French more than it will a Caro with 3. Bf5 (kinda), but it's a very good, solid opening. A lot of people prefer 3. c5 to 3. Bf5, some being very good players. Just make sure you know what you're doing with the pawn structure and you'll find success.
you're having trouble playing against the Shirov and the Tal and you think that by changing variation you will be fine? There is still a gigantic amount of theory to know and there are dangerous lines where Black has to make very hard moves. All of the material on 3... c5 except the Chessable LTR I saw had some mistakes in the analysis so be sure to pick that one if you want to learn it
the Modern scores better for Black than 1... e5 in the l*chess database, this doesn't mean c5 is better than 3... Bf5

It’s definitely playable and I played it a lot in the past year chasing master.
I think it’s arguably a better practical option for non-GMs than 3…Bf5 because it is more forcing and it allows fewer dangerous sidelines.
I think the recommendation nowadays by everyone (even our silicon friends) is 3...c5. The 3...Bf5 lines can be quite difficult to understand (I personally cannot say I fully understand these lines), while 3...c5 makes its intention clear right off the bat to strike back in the center.
The downside? You do get the French bishop, although it is supposed to be okay.
