I would use the two knights defence, simply because it is sharp and I find it fun to play.
The two best defenses to the Italian game is the standard Italian with 3...Bc5 or with the Two Knight's Defense with 3...Nf6. Personally I like the Two Knight's Defense because it is the most combative, but 3...Bc5 is very solid even though few players play the best lines for black in my experience.
