Make an opening that is unique and that you would actually play in a tournament.

I really like playing this as white. Idea is to trade off a bishop that normally doesnt do anything for a more active piece. Next I prepared for a c pawn push to clear the middle. It allows for great flexibility for white to really own the middle with the 2 knights and attack the vulnerable black queen. Only problem is setup is a bit slow and allows black to set up a defense.

What do you think?

You are playing the Torre Attack.

The Torre Attack only works after 1.d4 Nf6 2.Nf3 g6 3.Bg5 or 1.d4 Nf6 2.Nf3 e6 3.Bg5.

The line you give, 1.d4 d5 2.Nf3 Nf6 3.Bg5, SUX!  Black would be a blazing fool to cooperate with you and play 3...e6.

3...Ne4! is slight advantage Black!

The following is actually my own invention against an offbeat Gambit line in the French Tarrasch.  I have actually played the Black side of this twice in Over The Board competition, getting 1 win and 1 draw with it:

This is the mad-attack, shown to be good for white. I wouldn't play this as black, but as white I would play this in a tournament.

No one is insane enough to try it out in a tournament where each game counts.  Maybe in a random bullet game if they feel crazy enough, but certainly not any game longer than five minutes per side.

Anyway, here is one idea that I've pulled off in one game on this site already, although it requires some cooperation from the opponent (where the cooperation actually seems reasonable):
