To be honest, I think that simultaneously the most lazy and versatile opening black can play is to just go for a Hippopotamus setup. Can be used against practically any opening from white

I have your same problem/need. I play the London with white and decided to start playing 1...b6 and 2... Bb7 against everything. There are 2 / 3 books that teach how to play 1...b6 against everything.

Hi! Since you play the London System as White, I would suggest you play the Chebanenko Slav as Black against 1.d4, and the Caro Kann against 1.e4. The three openings share similar strategic themes. I adopted quite recently an alternative repertoire based on them and I'´m quite happy with the results.

Well, the Advance and the Two Knights and the Breyer and the Fantasy and the Panov’s a bit annoying and the old Mainline is still really good.

You know I literally never faced the panov in my life. I played like 400 games in the caro kann

London with 1.d42.Bf4 as white is good but stop there. There are soon zillions of different combinations after that. Play through lots of games with this two starting moves and get a feeling for what to do. Learning lines at your rating is useless and a waste of time.

The same for black: answer 1,e4 with 1e62d5, answer 1.d4 with 1.d52.e6 and all other openings with 1.Nf62.e6 and play through a lot of games with these starting moves too.

Study chess strategy in a beginners book and find out how to think in chess positions.

Do not waste your time on blitz; it is sloppy and full of mistakes. Chose 15 min+10 so you can think what and why. Increase from there.

I think I need to know just how lazy the OP is. If he is super lazy, you can play the Hippo as black or white, and basically against everything. That way you are only learning 1 opening, but you have to learn it really well. This idea kind of falls into the old Soviet school, where the focus was to first learn opening fundamentals but not necessarily any opening lines, then learn tactics, learn middlegames, endgames, mating patterns, then get into more opening theory and learning specific lines. Not that the Hippo is a great opening, but at 1100 it can serve you for a while as you work on the other areas of the game. Just food for thought.

Happy to learn ~3 openings for black. Sticking with the London for now as white, but may branch out later.

The last few days I've been learning about the French and the Caro Kann, and I'm enjoying the Caro Kann more, so that will be my response to E4.

I think OP has already decided to go with Caro-Kann and Slav, which are probably perfect for him since he play the London.

Well, I’d recommend just playing off of principles. No memorization needed + improves your skills
