I play the scotch against e5 myself. if your opponent tries the petroff, I play Nc3 which will usually go into the 4Knights Scotch. With the grand prix sicilian black does have a little trap if white isnt careful with e5. White has to play Nf3. With the center counter or scandinavian, also look at Nc6 instead of Qxd5. Anyways the real trick is to find an opening you're comfortable with.
