i was studying some game opening theory and my software seemed to overlook this series of moves. am i missing something? what do you think?

Yes I think that is the point, otherwise, the knight would just take knight ... but because of the pin, there is no need.

how about 7. Qd5+ for white instead of taking the knight right away?

you are right. better i think is 7. Qf4+ followed by 8. Nxe4

The biggest problem is that after 6. Qxe5, Black can simply play 6. ...Nf6. Everything is safe, and Black keeps the extra piece.
