When consulting opening tables here in this website and in lychess i get different results. For example, after a few moves, the opening tables in this site shows a move as the most played, but when i check another sites, i get different moves as the most played. Why that happen?

Depends on what, and how many games are in that database.

Do all sites base their tables on players in the same rating range and time frame?

It's the master's database here while lichess uses a bigger one. peshka.png

It's the same with the huge database that Chess King uses - it's larger than chess.com's due to including non-master games.
