Just seeking some advice for a 12/1300 amateur, what should I play against the Polerio defence?

I believe the move is bb5

At a 1200 level l would suggest leaving out 4.Ng5 as it can lead to some pretty complex stuff

Agreed!  4.d3 allows you to play 1 system (Slow Italian) against 2 defenses (3...Bc5 and 3...Nf6).  Not nearly as complex either.

D4 is better
