5...Qe7 is not the reason that 5.Nxe5 is bad.
5...Qd4! Is the reason for that.
After 5...Qe7, White can play 6.d4. It is still better for Black, but harder to execute as you now have to maintain the advantage through a long endgame with White already having played d4 and your f6 move is a waste as it will need to go to f5 for the knight to go to f6.
Again, after 6.d4 f6 7.Nc4 Qxe4+ 8.Qe2 Qxe2+ 9.Kxe2 O-O-O 10.c3 f5, Black is clearly better, but from a human perspective, easier is the fork rather than the Skewer as d4 is not permitted and ...f6 is not necessary. 5...Qd4! 6.Nf3 Qxe4+ and if White goes for the endgame, Black has a superior version. White still has to take time to play d3 or d4, and Black can keep the pawn on f7 or play f7-f5 in one go.
