How about 2...Nc6? 

Immediately puts pressure on the e4 pawn while developing a minor piece... This would also defend the d4 square if you chose to push your d5 pawn.

Then 3.d4 and your Knight blocks the c Pawn that really wants to attack the pawn chain.

this forum is surely dead, but I personally enjoy playing this move as white (2.e5) and after analyzing some, I think a move I'd be troubled by is 3...Qc7. The line going 1.e4 d5 2. e5!? c5 3.c3 Qc7! followed by Bf5 and e6 or Nc6 depending on if white chooses to play Bb5+ on their 4th move or not.

 

edit: said choosing instead of chooses. had to fix that.

That's just a transposition to the advance variation of the ...d5 Nimzowitsch defence, which (unless i am mistaken) is no longer considered very threatening. Black has a pleasant choice between 3...Bf5, or my preference: 3...f6
