For Evans, I just act like is never happened after 4...b5 Bxb5 5...c6 Bc6, and for fried liver, I don't play 2 knights anymore, but when I was a beginner I played the wilkes-barre countergambit or traxler couterattack.
but now I realsed that after Kf1 i just lost the exchange lol.
