My personal opinion is that beginners shouldn't worry about learning opening theory. At most levels of chess. including both yours and mine, nearly all games are decided by tactics. If you want to play a good opening at the beginner level, the most important thing you can do is follow the opening principles of controlling the center, developing pieces, and castling, while also keeping in mind general rules of thumb such as not making multiple moves with the same piece in the opening, not developing your queen too early, etc.
TL;DR: You don't really need openings at the beginner level. Focus on solid play.
...But if I had to give my personal recommendations, I'd say London as White and Caro-Kann against e4 as Black. Both of those are pretty solid openings. ![]()
