The Scotch

Ah, the scotch!
The scotch game is great for beginners in my opinion, most GM's don't play it because it is overanalyzed and it is also to simple, and therefore the majority would ask for a draw before the game even hits the endgame or middlegame. Therefore there would be no point to start it for their level of play.
Most people that are beginners or intermediate play it, however even some interemediates don't play in nowadays, most play the ruy lopez. But after that nothing else, not the scotch, not the four knights, not even the kings gambit. However none of these I would reccomend except for ruy lopez after 1600 because there is nothing to gain in these opening due to them being overanalyzed and played too much.
Due to this the scotch can be seen as a good opening to some(depending on their level) however from the perspective of a player that is broad with their openings and has more opening depth, I would say 95%-99% of the time, nobody picks the scotch anymore.
This is not me being against the scotch this is just reality, and when it was dominating in its time, it was good, now it can be dominated by those who use it efficiently but as for me, and for others it is just to simple or short of a repitoire and is not seen as much in OTB or online at higher levels of play.

I have started playing the 2 pawns gambit in the Goring recently 5.Bc4 instead of 5.Nc3 very interesting.

Ad so what for white? White is basically lost here in my opinion. Qd5 is a bad move while Bxf7 gives nice prospects.
Another wrong line :
In this 2nd variation, black is fine but position is playable for both sides.
Goring gambit is interesting but just a dream, when black could easily declines it :

Of course 4...d5 is fine, but since it simplifies the position quite a bit, I prefer 4...Nf6 5.e5 Nd5, since the very same position can also be reached from the Ponziani, and it is also fine for Black (the second line you've mentioned).

The lines you give in the Scotch gambit are stupid. After 4.Bc4, you don't mention at all a main line (4...Nf6), and after 4...Bc5 5.c3 (5.Ng5!? is more interesting than most people think) 5...Nf6! 6.e5 d5 7.Bb5 (I prefer 7.Be2!? myself) instead of the stupid 7...Ng8? Black could (and should) play 7...Ne4 8.cxd4 Bb6, with a heavily analysed position where Black is not worse.
