What Sicilian Variation to learn at beginner level?

I've learned the Sicilian Defense around a month ago, however I myself know that there are alot of variations and complex theories regarding the opening itself.

I'm having difficulties on where or what variation should I start learning and dive deeper onto the theory. Can anyone help give me some tips?

The Kan variation is commonly suggested. Another idea is the Accelerated Dragon or Hyper Accelerated Dragon. The only one I'd avoid is the Najdorf at the moment.

I got back to dabbling chess again and agree that the e6 Sicilian is beginner friendly for being practical and flexible considering many club players go with an anti-Sicilian such as the Alapin and Bc4 line.

E6 comes in handy when you are ready for a timely d4 pawn push and a6 prepares b5 for a minority pawn attack or fianchetto your bishop which creates counter attacks.

Against the Maroczy Bind, you can play the mainline Nf6 or hedgehog set-up.

Only Intermediate players and up.

Being a beginer, You will mostly play other beginers. For this reason You schould learn how to react to 2.Bc4 and 2.c4. Both moves are weak, but popular at low level so You can easilly grab adventage if You known how. Keep in mind however, that it is the open sicilian what is the true test to a sicilian player. You schould pick up a line against it quite early an polish it. Preferably something relatively simple, and relatively quiet, which is a hard pick as open sicilian is generally complex and sharp. Try taimanov variation or dragon variation. You may also try the pin variation ( aka sicilian counterattack) - objectively bad but trappy and quite tricky to counter. Just know that it will not make You a master - You will need something sounder.

It’s different times now with the readily available information, resources and coaches being able to push the right kind of players.

I have witnessed 500s surpassing 1200 and 1200s surpassing 1800 in a 6 months time span; both kids and adults improvers. I’m talking online and OTB.

If you can grasp the ideas, themes, strategies, map out the middle game plans and end games; you can do very well.

Obviously there are downsides to the Sicilian as well.
