‘Boring’ openings such as the exchange variations in the French Caro or Slav are very drawish due to the symmetrical position (less so in the caro). I also find that in the exchange Slav and caro (I don’t play the French due to the inferior c8 bishop) that black can often have issues with their c8 bishop developing to f5 or g4 due to knight jumps to h4 etc.

I like playing exchange because I know people hate that opening and usually get frustrated playing it and even more if you defeat them haha

Well, people that play the french are kinda lame to start. So might as well stick it to them and go with the exchange.
