I saw a YouTube video with Nakamura playing with Queen odds. How do you set it that way on chess.com?

It might only be available to certain staff. One staff member mentioned that Live games from a FEN position will be possible in the future.

Yeah it might be only a thing staff have to do. You could go and do it on lichess.
