I always love diverse number of pieces in the board, different designs of the board and playing with different fairy pieces during each game.
I have played different types of chess variants in www.jocly.com from June 2017 to October 2018 with different players until on Wednesday, 24 October 2018 www.jocly.com got shut down due to confiscation of game server by attackers.
Based upon my own experience, top 3 chess variants that I had ever played according to me are:
(1) Metamachy
(2) Grand chess
(3) Wildebeest chess
I can also provide my top 10 preferences according to my own tastes that are not still implemented at www.chess.com as of still:

Note that BabYagun told to me that Balanced Marseillais will take lot of developer resources and time to implement it with different engine, different PGN format, different UI, etc.

Most of the time anyone ends up trying out unrated games with AI, although AI there is quite strong especially level 8 and there are 8 levels of AI difficulty to play with any chess variant over thereby (unlike www.jocly.com demonstration page at https://mi-g.github.io/jocly/examples/browser/control.html?game=metamachy-chess which has only weak AI of single difficulty level to try out with for all of two player strategy board games available over thereby).
At www.musketeerchess.net, players can read the rules of each of type of chess variants that are available over thereby or play with AI online over thereby but not try out two player online games over thereby.
