You can't let White establish a dark square blockade. 56...b6 instead of a6 would have won. Also, you should be careful advancing pawns without support in an ending.

You're right of course, but imo it's more 'human' to start with Ne4+ there in order to avoid having to even think about Black playing ...Kc6. Then b6 next as you say, with a trivial win.

N + a and b pawns vs B is pretty much always winning unless they can establish the sort of set up seen at the end of the game, where the N is tied down to defending the advanaced a pawn.

The decisive mistake is by your opponent is 64. a7

There are better moves for him before, which win with relative ease. At that point (move 64), the win is still there, but is somewhat difficult.

A possible line:

64. Kb4 Bf2 65. Ka4 Bh4 66. Nb4 Ka7 67. Nd5 Be1 68. Kb3 Bg3 69. Kc4 Bd6 70. Kd4 Bf8 71. Ke5 Ba3 72. Ke6 Bc5 73. Kd7 Bg1 74. Kc6 Bf2 75. Ne7 Bd4 76. Nc8 Kb8 77. b6 and wins.

The winning plan is not that difficult once you see it, but coming up with something like that during an actual game (with clocks ticking) is not easy for amateur players like us.
