Game with one white knight and one black pawn doesn't end automatically. Why?

It happened 2 times for me. You can't mate with only a knight but if the opponent has a pawn you can checkmate according the rules. I can't imagine that. How?

Okay it's false. Instead of black pawn it must be black knight. So you need the opponents knight too to checkmate him. It will practically be almost impossible but how does it work?

It’s the side with the pawn that has winning chances, sine he might be able to upend. While it is theoretically possible to mate with the knight, you would need some help!
