I like this! I have had a couple of similar endgames in my time. One where I sacrificed three pawns and one where I sacrificed a bishop to gain an unstoppable passed pawn. In the second case my opponent was left with a knight which could not catch the passer in time, like the example you provide.

Yes, here after 1. b7 the pawn either pushes forward or captures, promoting either way. If black had a bishop, rook or queen on c8 instead of a knight black wins.
