There is no "optimum opening" because if there was, everyone would play it.

However, the best for beginners is what @Kapivarovskic suggested, which is e4 as white. It commonly leads to open games. I think the Italian, whilst hugely theoretical, can be relatively simple to play (especially the c3 d4 line). However, if you want something solid, I'd recommend looking into the Chessbrah's "building habits" YouTube series. They don't start with an opening, but rather start by focussing on developing their pieces (based on e4, playing both knights out, then bishops, castle etc.). Another point is that playing open positions tend to favour people who practice their tactics, whereas closed positions favour those who have positional knowledge. It's considered easier to develop tactical understanding (there's plenty of resources to do that), so that might be another reason to play e4
