I thought I was supposed to Castle, but it only seems to get me in trouble since i started doing it.

You are in checkmate.  The Black queen is attacking your king so you are in check.  But, Black's bishop on d6 protects the Black queen on h2. There is no way to escape the check.

After every move, look at threats and captures your opponent could make.  That will help you more quickly and easily identify immediate problems.  Keep playing, and it will get easier and make more sense.

Also, doing puzzles regularly will help refine your skills.

Should I stop castling? I notice this problem always happens when I castle.

No, the issue is not castling. The issue is just identifying threats your opponent has.

Here's the position before you lost:

 

You were perfectly fine being castled.  However, your opponent threatened checkmate and you didn't react properly.  Always be on the lookout for these kinds of threats (and especially checkmate threats) from your opponent.

Thank you. I think my problem is that i always hesitate to move the pawns around the Castled king. It's like I understand the whole point of them being there is to defend but I still don't enjoy the risk of losing them. Maybe it's an insecurity thing.

I think that you completely misunderstood what Alramech was explaining. What he is saying is this:

- you should notice that the opponent is threatening mate-in-1

- when you noticed it, you should do something about it.

In other words, you should start calculating 1 move ahead. There is no way around this.

You say that "i always hesitate to move the pawns around the Castled king". That is good. However, when your opponent threatens to mate you, and you let him mate you because you don't like moving pawn, that is absurd.
